I am no stranger to making coffee cake after coffee cake. It’s just that I usually make them in a bundt pan. I love those versions too!
But then I found this classic version in a sheet pan and I was so in.
I love having the option to make a 9×13 cake so I can freeze some, share some and more.
I don’t think it’s any secret that I love using greek yogurt in my cakes too. Because I love how moist it makes them. It adds a little bit of tangy flavor and it’s so simple. If you don’t have or love yogurt, you can always swap sour cream! It’s just as good and some would say… probably better.
I’m just over here, a huge yogurt freak.
Just look at that crumb!
This cake is EASY.
First, mix up the crumb so it’s ready.
Next, make the batter. It’s super simple and starts with melted butter! You can make it in one bowl. One and done!
Make sure to spray a 9×13 baking dish with the nonstick baking spray. You know, the one that has the flour in it too!
Then, spread half the batter in the pan. Top it with half the crumb.
Spread the remaining batter on top and then more crumb. It’s the BEST.
Bake, let it cool and there you go – a coffee cake for the masses!

Hahaha.
Coffee cake is just often enjoyed with a cup of coffee. It doesn’t have coffee IN the recipe.
P.S. it’s an excellent idea to warm a slice of this in the microwave for a few seconds before enjoying. Oh my gosh. It practically melts in your mouth!

Greek Yogurt Coffee Cake
We love this sheet pan greek yogurt coffee cake! It’s tender and moist with the most delicious cinnamon crumb. Perfect for morning, afternoon coffee or dessert!

Preheat the oven to 350 degrees F. Spray a 9×13 inch baking dish with nonstick baking spray.

In a small bowl, whisk together the flour, sugar, cocoa powder, cinnamon and salt. Add the butter pieces and using your hands, mix together the flour and butter until the flour is incorporated and in tiny pieces. The mixture will start to look like sand!

In another small bowl, whisk together the flour, baking powder, salt and soda.

In a large bowl, melt the butter. I just do this in the microwave until melted, in 30 second increments. Let cool for a few minutes.

Whisk in the sugar until combined. Whisk the eggs into the sugar and butter mixture. Whisk in the vanilla extract.

Add half of the dry ingredients, mixing until just combined. Stir in the greek yogurt until combined. Stir in the remaining dry ingredients until combined.

Spread half of the mixture into the baking dish. Sprinkle on half of the crumb. Spoon the remaining mixture on top of the crumb and gently use a spatula to spread it over the crumb. Top with the remaining crumb!

Bake for 45 to 50 minutes, or until a tester inserted in the center comes out clean.

Let cool completely before slicing and serving.
The crunchy crumb is everything.
